Creamy Asparagus and Potato Soup

Ingredients:

Instructions :

  1. Heat oil in saucepan and stir-fry onion for 1 minute. Add potato and stock and bring to the boil. Cover and simmer for 10 minutes.
  2. Cut 4 cm tips off asparagus, then cut stalks into 1 cm slices. Add all of the asparagus to the pan. Cover and simmer 5 mins.
  3. Reserve some of asparagus tips. Then blend the soup with the milk until smooth.
  4. Reheat soup gently and season with Tabasco sauce. Serve topped with reserved asparagus tips and cracked black pepper.
