Spanish Omelette

An omelette with a Spanish twist!

Ingredients:

Instructions :

  1. Boil potatoes until tender.
  2. Spray a large frying pan with the olive oil and fry the onion, potato and spicy sausage until brown.
  3. Add the capsicum and fry for a further 5 minutes.
  4. Beat the eggs together with the Season All, pepper and marjoram and stir in the sun-dried tomatoes. Pour into the pan and cook over a low heat until the mixture is almost set and is brown underneath.
  5. Sprinkle with the cheese and place under a hot grill until golden.
