Ingredients
  

  • 2 pcs Potatoes Such as Ruby Lou
  • 3 Tbsp Tomato Paste
  • 100 g Ricotta Cheese
  • 1/2 pc Green Capsicum Chopped
  • 1 Tbsp Dried Mixed Herbs
  • 1 Tbsp Grated Parmesan Cheese

Instructions
 

  • Heat oven to 200°C. Cut potatoes lengthways into 1cm thick slices. Bake on a greased tray for 15 minutes.
  • Remove potato from oven and top with tomato paste, ricotta cheese, capsicum, herbs and Parmesan cheese. Bake for a further 10 minutes or until golden brown. Serve immediately.
