- 2 pcs Potatoes Such as Ruby Lou
- 3 Tbsp Tomato Paste
- 100 g Ricotta Cheese
- 1/2 pc Green Capsicum Chopped
- 1 Tbsp Dried Mixed Herbs
- 1 Tbsp Grated Parmesan Cheese
- Heat oven to 200°C. Cut potatoes lengthways into 1cm thick slices. Bake on a greased tray for 15 minutes.
- Remove potato from oven and top with tomato paste, ricotta cheese, capsicum, herbs and Parmesan cheese. Bake for a further 10 minutes or until golden brown. Serve immediately.
