Instructions
Fresh Tomato Salsa: Mix together tomatoes, diced onion, garlic, extra coriander, chilli and lime juice. Refrigerate.
Spray non stick frypan with cooking spray.
Lightly sauté onion and capsicum.
Cut avocado into 12 slices.
Warm tortillas in oven and fill with capsicum, onions, avocado slices and salsa.
