Avocado Tacos
Tortillas filled with avocado, capsicum and fresh tomato salsa.
Ingredients
- 1 pc Ripe Avocado Peeled and seeded
- 1 pc Medium Onion Thinly sliced
- 2 pcs Large Red Capsicums Julienned
- 2 pcs Large Green Capsicums Julienned
- 1 cup Fresh Coriander Finely chopped
- 12 pcs Tortillas
- 1 cup Diced Tomatoes
- 1/3 cup Diced Onions
- 1 pc Garlic Clove Crushed
- 2 tsp Fresh Coriander Extra
- 1/3 tsp Fresh Chilli Peppers Chopped
- 1/2 tsp Lime Juice
Instructions
- Fresh Tomato Salsa: Mix together tomatoes, diced onion, garlic, extra coriander, chilli and lime juice. Refrigerate.
- Spray non stick frypan with cooking spray.
- Lightly sauté onion and capsicum.
- Cut avocado into 12 slices.
- Warm tortillas in oven and fill with capsicum, onions, avocado slices and salsa.
