Ingredients
  

  • 1 pc Ripe Avocado Peeled and seeded
  • 1 pc Medium Onion Thinly sliced
  • 2 pcs Large Red Capsicums Julienned
  • 2 pcs Large Green Capsicums Julienned
  • 1 cup Fresh Coriander Finely chopped
  • 12 pcs Tortillas
  • 1 cup Diced Tomatoes
  • 1/3 cup Diced Onions
  • 1 pc Garlic Clove Crushed
  • 2 tsp Fresh Coriander Extra
  • 1/3 tsp Fresh Chilli Peppers Chopped
  • 1/2 tsp Lime Juice

Instructions
 

  • Fresh Tomato Salsa: Mix together tomatoes, diced onion, garlic, extra coriander, chilli and lime juice. Refrigerate.
  • Spray non stick frypan with cooking spray.
  • Lightly sauté onion and capsicum.
  • Cut avocado into 12 slices.
  • Warm tortillas in oven and fill with capsicum, onions, avocado slices and salsa.
