Banana & Apple Compote
- 2 cups Apple Juice
- 1 Tbsp Vanilla Extract
- 1 pc Cinnamon Stick
- 4 pcs Ripe Bananas Peeled and sliced
- 4 Tbsp Non-fat Yoghurt or Ricotta Cream (Garnish)
- 1 tsp Nutmeg (Garnish)
- Simmer apple juice, raisins, vanilla extract and cinnamon in a saucepan for 5 minutes.
- Add bananas, cover and simmer 8-10 minutes until tender.
- Remove cinnamon stick before serving.
- Serve with yoghurt or ricotta cream and sprinkle of nutmeg.
