  • 4 pcs Fish Fillets, Such as Schnapper or Perch (about 100g each)
  • 1 Tbsp Olive Oil
  • 1 Leek Washed and sliced
  • 1 cup Fresh Corn Kernels
  • 1 pc Tomato Finely chopped
  • 1 Pinch of Freshly Ground Black Pepper to taste
  • 1 pc Lemon Cut into wedges, to garnish


  • Heat a pan and brush with a little oil. Saut√© leek for 1 minute. Add corn, tomato and freshly ground black pepper to taste. Cover and cook gently for 5 minutes.
  • Grill fish until flesh flakes with a fork. Carefully transfer fish to serving plates. Top fish with leek and corn mixture. Garnish with lemon wedges.
