Mini Beetroot Kebabs
- 450 g Can of Golden Circle Whole Baby Beets
- 1 pc Green Capsicum 140g
- 1 pc red capsicum 140g
- 600 g Baby Yellow Squash
- 1 pc Medium Onion (120g) Cut into eights
- 100 g Mushrooms Halved
- 1 Tbsp olive oil
- 8 pcs Skewers
- Cut capsicum and squash into even bite-size pieces and thread onto skewers with baby beets and remaining vegetables.
- Heat grill or griddle plate, brush skewers with a little oil and cook 3-4 minutes until cooked to taste.
