Potato and Vegetable Lasagne

Try this twist on an old favourite.

Ingredients:

Instructions :

  1. Place potato slices in a large mixing bowl, adding herbs, olives, onion and a little salt and pepper. Mix well.
  2. Lightly spray a ceramic baking dish with olive oil spray. Place a thin layer of potato mixture on the bottom of the dish. Spread Italian sauce on top and lay strips of sausage over the sauce. Repeat process until all mixture is used.
  3. Cover baking dish with foil. Cook for 1 hour 15 minutes at 180°C.
