Potato and Zucchini Layer

Ingredients:

Instructions :

  1. Preheat oven to 200°C.
  2. Place half the potato slices in an ovenproof dish.
  3. Sprinkle with thyme, garlic, salt, pepper and spring onions.
  4. Add zucchini and red capsicum, season and drizzle with a little olive oil.
  5. Top with the remaining potatoes, brush with oil and sprinkle with salt and pepper.
  6. Cover with foil and bake for 40 - 45 minutes at 200°C, removing the foil for the last 10 minutes.
