Hazelnut and Banana Pikelets

Ingredients:

Instructions :

  1. In a food processor or large bowl, combine the flour, oats, bicarb and Equal.
  2. Add the hazelnuts and make a well in the centre. Beat together the eggs and buttermilk and pour into the dry ingredients. Stir to just combine, then fold in the bananas.
  3. Heat a non-stick lightly oiled pan and drop spoonfuls of mixture into the pan. When bubbles form on the surface flip over and cook for 1 minute, or until browned.
  4. Serve up 3 pancakes warm with fresh ricotta or sprinkled with a little lemon juice and Equal for each person
