- 1 Tbsp Olive Oil
- 1 pc Onion Chopped
- 1/2 cup Red Lentils
- 2 pcs Tomatoes Quartered
- 1 pc Red Chilli Sliced
- 4 cups Vegetable Stock Reduced-salt
- 2 tsp Lemon Pepper
- 1/4 cup Tomato Paste
- Heat oil in a heavy based saucepan. Add onion and cook until soft. Add lentils, tomatoes, tomato paste, chilli and stock. Simmer for 20 minutes.
- Remove skins from tomatoes. Add lemon pepper to taste, and serve hot.
