Tomato and Lentil Soup

Ingredients
  

  • 1 Tbsp Olive Oil
  • 1 pc Onion Chopped
  • 1/2 cup Red Lentils
  • 2 pcs Tomatoes Quartered
  • 1 pc Red Chilli Sliced
  • 4 cups Vegetable Stock Reduced-salt
  • 2 tsp Lemon Pepper
  • 1/4 cup Tomato Paste

Instructions
 

  • Heat oil in a heavy based saucepan. Add onion and cook until soft. Add lentils, tomatoes, tomato paste, chilli and stock. Simmer for 20 minutes.
  • Remove skins from tomatoes. Add lemon pepper to taste, and serve hot.
